Eggs 3
Parmesan 150 gram
Panchetta 75 gram
Penne 80 gram
Salt and Pepper To taste


Step 1

Add two egg yolk and one whole egg to a bowl

Step 2

Grate and add parmesan along with salt and pepper

Step 3

Whisk until combined

Step 4

Fry off panchetta in a pan

Step 5

Boil penne

Step 6

Add 3tbsp bacon oil to the eggs and parmesan mix to temper the eggs

Step 7

Once penne is cooked, add into the panchetta pan on low heat

Step 8

Slowly combine the eggs and parmesan mix into the pan

Step 9

Add pasta water to loosen the sauce to desired looseness

Step 10

Serve and enjoy!
