Ingredients

Potatoes 450 gram
Onion 1
Green Beans 150 gram
Chicken Stock Paste 10 gram
Chicken Breasts 2
Apple and Sage Jelly 50 gram
Water 150 millilitre

Steps

Step 1

Preheat the oven too 220/200 fan/gas 7 and boil a kettle. Place a large saucepan of water with 1/2 teaspoon of salt on to boil.

Step 2

Chop the potatoes into 2cm chunks; halve, peel, and thinly slice the onion; trim the green beans; and put hals the chicken stock paste in a measuring jug, pour into the 100ml boiled water from the kettle to make the chicken stock.

Step 3

Heat a large frying pan on medium heat. Once hot, add the butter and onion seasoned with salt and pepper. Stir until softened, this may take around 3 minutes.

Step 4

Pour in the chicken stock and stir to combine, then transfer everything to an oven dish and set to one side. Wipe the empty pan and put it on medium heat with a drizzle of oil.

Step 5

Once the pan is hot, place the chicken into the pan, season with salt and pepper, then fry until it is golden. This may take around 5-6 minutes. You should then turn to cook the other side.

Step 6

Transfer the chicken into the ovenproof dish, then bake on the top shelf of the oven until cooked for around 20-25 minutes. Whilst the chicken is cooking, move onto the next step

Step 7

Add the potatoes to a pan of boiling water and cook until soft, this could take up to 20 minutes. Once cooked, drain into a colander and return them to the pan (off the heat). Add a knob of butter and a small amount of milk if you want to - a splash or less (dairy-free milk works too!) and mash until smooth. Season with salt and pepper, then cover with a lid, tin-foil, or plate (check pan is not too hot!) to keep warm.

Step 8

Heat a drizzle of oil in the empty frying pan on medium heat. Once hot, add the green beans to the pan and stir-fry until they begin to char. This should be done around 2-3 minutes. Immediately cover with a lid or foil, then cook for 4-5 minutes. Season with salt and pepper, then remove from the heat.
