Potatoes 450 gram
Garlic Clove 1
Tarragon 1/2 bunch
Chicken Breast 2
Peas 120 gram
Creme Fraiche 75 gram
Chicken Stock Paste 10 gram
Water 75 millilitre
Baking Paper / Parchment Small amount


Step 1

Preheat the oven to 220C/200C fan/gas mark 7.

Step 2

Chop potatoes into 2cm chunks (don't peel). Put them in a baking tray and drizzle with oil, then season with salt and pepper. You should turn them in the tray to coat them.

Step 3

Peel and grate the garlic (or use a garlic crusher). Pick the tarragon leaves from their stalks and finely chop. Place each chicken breast between two pieces of baking paper. Put them onto a board, then bash with a rolling pin or the bottom of a pan until it's around one or two centimetres thick.

Step 4

When the potatoes are about half cooked, heat a drizzle of oil in a large frying pan on medium-high heat. Season the chicken with salt and pepper, then put them in a pan. Cook until brown, this typically takes around 4 minutes per side.

Step 5

Transfer the chicken into a baking tray and roast on the top shelf of your oven until the chicken is fully cooked. This could take up to ten minutes. Check it's cooked by cutting into a piece - if it's pink it needs more time.

Step 6

Empty the frying pan and place it back onto medium-high heat with a small amount of oil if it needs it, once hot add the peas and cook for around 3 minutes. Season with salt and pepper, then place them in a bowl. You should cover them to keep them warm.

Step 7

Put the frying pan back on medium heat with more oil if needed. Once hot, add the garlic and fry for a minute.

Step 8

Next, add the creme fraiche, chicken stock paste, and water. Stir it all together and bring to a simmer until the sauce has thickened. This may take around 2 minutes. Once done, remove from the heat and stir through the tarragon.

Step 9

Once you've finished everything, slice the chicken, serve and enjoy!
