Ingredients

Bell Pepper 1
Green Beans 80 gram
Spring Onion 1
Garlic 2 cloves
Cornflour 10 gram
Diced Chicken Thigh 190 gram
Egg Noodle Nest 125 gram
Ketjap Manis 50 gram
Rice Vinegar 30 millilitre
Tomato Ketchup 2 tablespoon
Sugar 1 teaspoon
Water 75 millilitre

Steps

Step 1

Bring a large saucepan of water to the boil with 1/2 tsp salt for the noodles.

Step 2

Halve the bell pepper and discard the core and seeds. Chop into 2cm chunks. Trim the green beans, then cut into thirds. Trim and thinly slice the spring onion. Peel and grate the garlic (or use a garlic crusher).

Step 3

Heat a drizzle of oil in a large frying pan on medium-high heat. Once hot, add the pepper chunks and season with salt and pepper. Fry until they start to soften (this usually takes around 3 or 4 minutes). Stir in the garlic, cook for a minute, then transfer the cooked veg into a medium bowl to set aside.

Step 4

Put the cornflour into a large bowl and season with salt and pepper. Add the diced chicken to the bowl and coss to coat completely in the cornflour. Put the empty frying pan back on medium-high heat with a drizzle of oil if needed. Once hot, add the chicken. Fry until golden brown on the outside and cooked through. This usually takes around 8-10 minutes.

Step 5

Whilst the chicken cooks, add the noodles and green beans to the pan of boiling water. Cook until tender, this typically takes around 4 minutes. Once cooked, drain in a sieve and run under cold water to prevent them from sticking together.

Step 6

Once the chicken is cooked, add the cooked veg back into the pan. Lower the heat to medium, then add the ketjap manis, rice vinegar, ketchup, sugar, and water. Stir to combine and simmer until the sauce has reduced slightly, this takes around 2 or 3 minutes.

Step 7

Remove from the heat, then taste and season with salt and pepper if needed. You can also add a splash of water if you'd like. Add the cooked noodles and beans to the chicken stir-fry and toss to coat well in the sauce. Serve up, and enjoy!
