Ingredients

Pork Mince 240 gram
Garlic 1 clove
Central American Style Spice Mix 1 sachet
Tomato Puree 30 gram
Chicken Stock Paste 10 gram
Baby Gem Lettuce 1
Medium Tomato 2
Mature Cheddar Cheese 30 gram
Red Wine Vinegar 12 millilitre
Plain Taco Tortillas 6
Water 75 millilitre
Sugar 1/2 teaspoon
Olive Oil 1 tablespoon
Mayonnaise 2 tablespoon

Steps

Step 1

Heat a medium frying pan on medium-high heat (no or minimal oil). Once hot, add the mince and fry until browned (for around 4-5 minutes). Use a spoon to break it up as it cooks, then drain and discard any excess fat.

Step 2

Meanwhile, peel and grate the garlic or use a garlic crusher. Add the garlic, Central American style spice mix, and tomato puree to the mince. Stir-fry for 1 minute.

Step 3

Stir in the water, add chicken stock paste. Lower the heat and simmer until thickened (this usually takes around 1 or 2 minutes). Once thickened, taste and season with salt and pepper if needed. Add a splash of water if it is too thick.

Step 4

Trim the baby gem lettuce, halve lengthways, then thinly slice. Chop the tomatoes into small chunks, and grate the cheese.

Step 5

Put the red wine vinegar, sugar, and olive oil into a medium bowl. Season with salt and pepper and mix together.

Step 6

Add the tomato chunks to the dressing. Mix together and set aside.

Step 7

Place the tortillas in an oven at 220C/200C fan/gas mark 7 for 1-2 minutes, or microwave for 1 minute.

Step 8

Spread the base of each tortilla with mayonnaise, top with the baby gem, spoonfuls of mince, and tomato salsa. Finish with grated cheese, and serve alongside salsa.
